Winter in Cappadocia is cold, short on sunshine and the quietest season for balloons, and it is also the one where the fairy chimneys can wear snow. In Nevşehir the average January temperature is −0.1 °C, December and January get about 3 hours of sunshine a day, and balloons flew on 34% of winter days in our record. What you cannot read from the data is a snow forecast: the only snow figure is the deepest cover on record, 64 cm on 2 February 1992. This guide sets out the December–February numbers, the balloon record and what the 80 hotels in our catalogue say about heating. It gives no prices and no opening hours.

December to February in numbers

The climate figures are 1959–2025 averages from the Nevşehir station (MGM). Göreme, Uçhisar and Ürgüp can differ a little from the station.

Month Average High / low Sunshine (h/day) Rainy days Rain (mm) Lowest recorded
December 2.1 °C 6.2 / −1.3 °C 3.1 12.3 48.4 −19.5 °C
January −0.1 °C 4.0 / −3.6 °C 3.1 12.3 45.4 −21.2 °C
February 0.9 °C 5.5 / −2.6 °C 4.2 12.1 41.1 −23.6 °C

The average high never passes 6.2 °C and the average low is below zero in every month. Roughly 12 days a month are rainy, and with those temperatures part of that precipitation can fall as snow. For the other seasons side by side see when to visit Cappadocia.

Snow: what the record does and does not say

The one snow number we hold is the maximum depth, 64 cm on 2 February 1992. It tells you that heavy snow has happened, not how often. We have no count of snow days, so nobody can promise you a white week. What the temperatures do suggest is that snow is possible in all three months, and that frost on steps and slopes is common.

Snow changes how you move more than where you go. Rock paths and the steps of cave hotels can be slippery, so shoes with grip matter more than a heavy coat. Valley walks are possible on dry days; choose shorter loops on a snowy day and ask your hotel which paths are passable.

Balloons in winter

Balloons still fly in winter, but on fewer mornings. Our calendar covers 1 January 2025 to 2 August 2026, which gives five winter months.

Month 2025 2026 Both years
December 9 of 31 (29%) not in record 9 of 31 (29%)
January 18 of 31 (58%) 9 of 31 (29%) 27 of 62 (44%)
February 7 of 28 (25%) 8 of 28 (29%) 15 of 56 (27%)
Winter total 34 of 90 17 of 59 51 of 149 (34%)

Two things stand out. First, the winters differ: January and February 2025 together reached 25 of 59 days (42%), while December 2025 to February 2026 reached 26 of 90 (29%). With one and a half winters in the record, treat both as examples, not a rule. Second, cancellations come in runs. The longest was 18 days, 5 to 22 February 2025, and the longest in the 2025–26 winter was 9 days, 6 to 14 February 2026. The longest flying run was 10 days, from 26 January to 4 February 2025.

For planning, look at windows rather than single days. In winter, a window of 3 mornings held at least one flight on 63% of starting days, and a window of 5 mornings on 81%. That is why we suggest 4 or 5 nights if a flight is the point of the trip. The day-by-day tables are in when balloons fly. If you only want to watch, many hotel terraces list a balloon view; see the hotel list.

Heating in a cave hotel: what the records say

A carved room changes temperature slowly. That helps on a hot afternoon, and it means a cold room can take time to warm up in January, so the heating system matters more than the rock. Our catalogue is thin on this. Reading all 80 records:

  • Heated floors: 5 hotels. Vita Cave Suites (Ortahisar, 14 rooms), The Calypso Cave (Ürgüp, 7 rooms), Kayata Cave Suites (Ürgüp, 9 rooms), Nujel’m Cappadocia (Mustafapaşa, 18 rooms) and Zara Cave Hotel +10 (Göreme, 17 rooms). Four tick it among their amenities; Kayata says it in its highlights.
  • Fireplaces: 4 hotels. Seki Cave Hotel (Çavuşin) fits one in each of its 16 rooms; Divan Cave House (Göreme) has fireplaces in its 12 rock-carved rooms; Azure Cave Suites (Çavuşin) offers fireplace suites as one room type; and Leda Stone House (Uçhisar) lists fireplaces among its room features.
  • Heated rooms, type not stated: 1 hotel. Local Cave House (Göreme, 12 rooms) describes its rooms as heated and air-conditioned.
  • Air conditioning: 48 hotels (35 in Göreme, 7 in Uçhisar, 3 in Ürgüp, 2 in Çavuşin, 1 in Ortahisar, none in Mustafapaşa). The tick does not say whether the unit also heats, so it is not a heating answer on its own.

That makes 10 hotels with a stated heating feature and 70 that say nothing. Silence is not absence, but it means the question belongs in your email: how is my room heated, and is it on when I arrive? Ask the same about hot water and about damp, and see the cave hotel checklist for the full list.

Warming up indoors

Winter is the season in which the wellness facilities earn their place. In the catalogue 7 hotels tick a hamam, 12 a spa and 7 a hot tub or jacuzzi, and two list an indoor pool: Heybe Hotel & Spa in Göreme and Yılkı Cave Suites in Mustafapaşa. Several outdoor pools are seasonal, so do not plan a swim without asking. The hamam guide covers what a visit involves and who should take care in the heat. On a day with no flight, a late breakfast and a warm bath is a reasonable plan: 66 of the 80 hotels include breakfast.

Practical notes

  • Layers beat one big coat. Mornings before dawn are the coldest hour, and the averages above are daily means; the record lows are far below them.
  • Allow for short days. Sunshine averages 3.1 to 4.2 hours a day, so do the outdoor items early and keep the evening for the hotel. Ask the hotel for sunrise and sunset times on your dates.
  • Keep arrival flexible. Snow and ice can slow road transfers; confirm pick-up details with your hotel, and tell it your flight number.
  • Check live conditions on the weather page before each day out.

Where to stay in winter

If heating decides the booking, start with the hotels that name it. Vita Cave Suites says every one of its 14 rooms has heated floors, and The Calypso Cave says the same of its seven rooms, which also have jetted tubs in the private bathrooms. Seki Cave Hotel puts a fireplace in each room, and Local Cave House lists heated rooms with a pool cut into the rock. Travellers Cave Hotel, pictured above, lists air conditioning, a wake-up service and hilltop terraces facing the balloons, but its record does not state how the rooms are heated, so ask. After choosing, you can book through gocappadocia.com, the regional booking platform created through the combined efforts of 175 Cappadocia hoteliers, with a best-price guarantee; this guide takes no commission.
