May is Cappadocia’s greenest month in the most literal sense: it has the most precipitation of the year, 57.9 mm, and after the spring rains the valleys are usually at their freshest. The weather is warm without being hot, with an average high of 20.6 °C and 8.4 hours of sun a day, and balloons flew on 40 of the 62 May days in our 2025 and 2026 record (65%). That share hides a wide gap between the years: 74% in 2025 and 55% in 2026. This guide sets the weather, the flight record and the catalogue’s pool records side by side. It has no prices or opening hours.

The weather in May

Measure April May June
Average temperature 10.2 °C 14.5 °C 18.3 °C
Average high / low 16.0 / 5.1 °C 20.6 / 8.9 °C 24.9 / 11.7 °C
Gap between day and night 10.9 °C 11.7 °C 13.2 °C
Sunshine, hours a day 6.6 8.4 10.6
Rainy days 12.5 12.9 8.1
Precipitation 50.2 mm 57.9 mm 37.5 mm
Record high / low 31.6 / −12.5 °C 32.6 / −2.3 °C 35.0 / 1.3 °C

MGM averages for 1959–2025, Nevşehir. The three spring months together bring 156.2 mm of precipitation, against 55.3 mm for the three summer months, which is the usual reason the valleys look green at this time of year; we hold no vegetation data, so treat that as the likely explanation, not a measurement. May’s record low is −2.3 °C, so a late frost has happened, if rarely; June’s record low is 1.3 °C.

Rain falls on 12.9 days, the second most of any month after March, so a rain layer and shoes with grip belong in the bag. The upside is the light: 8.4 hours of sun a day is nearly two hours more than April, and the afternoons are warm enough for a terrace.

Balloons in May 2025 and 2026

Year Flown Cancelled Share Days without flights
May 2025 23 8 74% 1, 8, 11, 13, 17, 26–28
May 2026 17 14 55% 1–6, 14–15, 17–19, 21, 28–29

The two Mays are 19 points apart. In 2025 balloons flew 8 days in a row from 18 to 25 May and then on 29 to 31 May, the start of the longest run in the record, 16 days to 13 June. In 2026 the month opened with 6 cancelled days, 1 to 6 May, one of only ten cancellation streaks of five days or more in the whole record; flying then ran for 7 days, from 7 to 13 May, and the month closed with flights on 30 and 31 May, the start of a 14-day run that carried into June.

Counting only windows of consecutive mornings that sit wholly inside May, in both years:

Mornings 2 3 4 5
Windows with at least one flight 82% 90% 95% 96%

Even with the weak start of May 2026 in the sample, three mornings gave a flight in nine windows out of ten. The sample is two Mays and it cannot say whether a particular morning will fly: the decision is made on the day, on wind and visibility. Plan three or four nights, book the flight for your first morning and keep spare mornings behind it. The month-by-month table is in balloon flight days.

A day in May

The coldest hour is still the balloon pick-up: the average low of 8.9 °C is mild next to winter, but a jacket and a hat are sensible before sunrise. By afternoon the average high of 20.6 °C is pleasant for walking, and May is a good month for the longer routes: Pigeon Valley, the one-way walk from Uçhisar down to Göreme, is a half-day, and the hiking overview compares the valleys for shade, length and difficulty. Carry water and a hat, since the sun is already strong, and keep a rain layer for the afternoon. May is also the last month with more than 12 rainy days: from June the count falls to 8.1, and in July and August to about two.

May or June?

June lifts the average high to 24.9 °C (4.3 degrees more), cuts the rainy days from 12.9 to 8.1 and takes the share of flying days to 83% in both years. If rain worries you more than warmth, June is the safer pick for the flight; if you want a cooler, greener landscape, May. The gap between the two months (65% against 83% over the two years) is about as wide as the gap between the two Mays themselves (74% against 55%).

Pools in May: check before you count on one

15 catalogue records mention a swimming pool: 13 tick “Swimming pool”, Yılkı Cave Suites ticks an indoor pool, and Sultan Cave Suites names a seasonal outdoor pool without ticking it. By town that is 12 in Göreme, 2 in Uçhisar and 1 in Mustafapaşa. (Eka Cave Maison’s heated pools inside private rooms are a different thing and are not counted.) Seven of the 15 say the pool is seasonal: Aza Cave Hotel (+12 Adults Only), Göreme Cave Lodge, Göreme Cave Suites, Kelebek Cave Hotel, Secret Hill Cave Suites, Soho Cappadocia and Sultan Cave Suites. The records give no opening dates. May’s average high of 20.6 °C does not make a cold outdoor pool inviting, so if swimming is part of the plan, ask the hotel in writing whether the pool is open, and heated, on your dates.
